Chekkalu / Nippattu / Thattai (Rice Crackers)



Ingredients :


Rice flour : 1 cup (any cup)
Coarsely ground roasted Peanuts  : 1 cup
Coarsely ground Fried Gram : 1 cup
Dessicated Coconut : 1cup
Sesame seeds : 1cup
Channa dal (soaked in water 15minutes): 4 tbsp
Salt : 2 tbsp
Chilli Powder : 2 tbsp
Asaphoetida (Hing) : 1/2 tsp
Curry leaves 
Oil for deep fry
Enough Water to mix the dough


Method :


. In a mixing bowl take Rice flour, peanuts powder, fried
 gram powder, coconut, salt, chilli powder, hing, Sesame
 seeds, drained Channa dal and Curry leaves mix together
 with Ur hands.


. Mix well and slowly add enough water and mix the dough
  like chapati dough. Cover the dough and keep aside 
 10minutes.


. Take the dough and make small balls, Take a foil or ziploc
  spread some oil and place the balls and press with Ur
  fingers like Chekkalu or(cover the balls with Ziploc and 
  press the dough as thin as possible with any round shape
  bowl or plate).





. Heat the Oil and carefully drop the Chekkalu into the Oil

  and deep fry with medium heat till nice golden color.



. Remove to the paper towel, let it cool and store in the 
  air tight container.



. Enjoy nice and crispy Chekkalu/ Nippattu/ Thattai :-)
