Chayoti Curry / Bangalore Vankaya Curry




Ingredients :
Chayoti / Bangalore Vankaya : 2
Onion chopped : 1
Tomato chopped : 1
Soaked Channa dal : 3 tbsp
Green Chillies : 3
Curry leaves 
Shredded Coconut : 2 tbsp
Mustard seeds : 1 tsp
Cummin seeds : 1 tsp
Urad dal : 1 tsp
Dry Red Chillies : 2
Crushed Garlic cloves : 2
Turmeric powder : 1/2 tbsp
Cilantro
Salt to taste
Oil

Method :

. Peel the skin and cut the Chayoti and soak the channa dal and keep
  aside.

. In a Pan heat oil and season with Mustard seeds, Cummin seeds, 
  Urad dal and dry red chillies saute it.


. Now add the chopped Onions and green chillies saute it till they
  change color.

. Add Soked Channa dal mix it cook for 2 minutes and add chopped 
  tomatoe, Crushed Garlic and cook.


. Add the Cut Chayoti, Turmeric, salt and Curry leaves mix it well
  and cover the lid and cook in medium heat .



. Once it cooked add the shredded Coconut mix it well and cook in
  low heat 5 minutes.


. Garnish with cilantro and serve with Rotis / Rice.

    I have tried this curry and it came out well but my vankaya pieces did not cook without adding some water so I added little water for them to cook but taste was good.
