Coconut Rice (Easy Lunch Box Recipe)



Ingredients :
Cooked rice : 2 cups
Shredded Coconut : 1 cup
Green Chillies : 2 or 3
Ginger : 1 inch
Curry leaves
Oil : 1 tbsp
Mustard seeds : 1 tbsp
Cumin seeds : 1 tbsp
Urad dal : 1 tbsp
Channa dal : 1 tbsp
Roasted Peanuts : 2 tbsp
Cashews : 1 tbsp
Salt to taste
Hing : 1 pinch


Method :


. Heat a tbsp of oil in a Pan, add Mustard seeds, Cumin
  seeds after sputters add the Channa dal, Urad dal, Peanuts,
  Cashews fry few seconds.



. Add the Chillies, Ginger, Curry leaves and Hing fry a
  minute.


. Now add the Shredded Coconut and fry 2 minutes.







. Add the cooked Rice and add some salt mix it well and
  switch off the stove.



. Serve it hot with Pickle.
