Pumpkin Curry



Ingredients :
Pumpkin cubes : 1 cup
Onions chopped : 1/2 cup
Red Chillies : 2
Jagerry  : 1 tbsp
Grated Coconut : 2 tbsp
Mustard seeds : 1 tsp
Fennel seeds or cumin seeds : 1 tsp
Channa dal : 1 tsp
Urad dal : 1 tsp
Turmeric Powder : 1/2 tsp
Curry leaves : 5
Oil : 1 tbsp
Salt to taste


Method :


. Peel the Pumpkin  skin remove the seeds and strings
   cut in to cubes.


. In a bowl add some water and cubed Pumpkins cook for 
  8 minutes and keep aside.


. Heat 1 tbsp of Oil add the Mustard seeds, Cumin seeds,
 Channa dal, Urad dal, Red Chillies and curry leaves fry for
 2 minutes.


. Now add the cooked Pumpkin cubes add some salt and
 Turmeric mix it well and cover the lid for 3 minutes in low 
 heat.


. Add the Jaggery mix it well and add the Grated coconut
 mix it well and cook 5 minutes.


. Serve with Rice or Roti.
