Quinoa Vangi Bhath



Ingredients :
Quinoa : 1 1/2 cup
Eggplant (Bringal) Chopped: 2
Frozen mixed Vegetables : 1/2 cup
Onion chopped : 1/2
Green chillies : 2
Mustard seeds : 1 tsp
Curry leaves : 5
Cashews : 5
Turmeric powder : 1 tsp
Vangi Bhath Masala : 2 tbsp
Tamarind Paste : 1 tbsp
Salt to taste
Water : 3 cups
Oil


Method : 


. Boil 3 cups of  water with adding some salt, Mean while add
 tbsp of oil in a pan and Roast the Quinoa for 2 minutes.


. Once the water boils add the roasted Quinoa and cook in 
  low flame up to fully cooked and keep aside.



. In a Pan add 1 tbsp of oil add the Mustard seeds splutter
  them, Now add the Cashews, Onions, green chillies, curry
  leaves fry them.


. Now add the cut Eggplant (Bringal) and add the mixed
  vegetables fry for 3 minutes, Now add the Tamarind
 paste,Turmeric mix it well add some salt and Vangi Bhath
 Masala mix it well and cook 3 minutes.


. Once vegetables cook add the cooked Quinoa and mix it
   well and serve hot.
